Random Thought- Recipe to Riches: Luscious Lemon Pudding Cakes
I watch a lot of shows on the Food Network and one that caught my eye was “Recipe to Riches”. It’s a reality show where regular peeps like us send in their recipe in hopes to have their creation transformed into a President’s Choice product and win the ultimate prize of $250,000.
Glo McNeill from Nova Scotia won the grand prize for her “Luscious Lemon Pudding Cake” recipe and her cakes are now being sold in every Superstore location! I was lucky enough to find them as I heard these flew out of the shelves like hot cakes right after she won! It is sold for $6.99 and each package contains four pudding cakes. I find it a tad expensive given the quantity, but I wanted to see what was so delicious about these cakes for them to win 250 grand.

The top was half baked and the bottom was liquid before frozen.
After fifteen minutes of baking, the pudding cake has developed a nice crust on top but the bottom third of cake remains a pudding consistency.
I really didn’t have high expectations for this dessert. Lemon pudding cake just doesn’t sound like it could be amazing but it proved me wrong. It was absolutely freakin’ delicious! I can see why this won the grand prize.
The top was very crispy and almost had a ‘crunch’ to it when forking through.The middle layer was a moist lemon sponge cake. And the bottom layer was like a lemon custard…Yes, I would say the bottom layer is more like a custard than it is a pudding to me.
At first I was afraid that the lemon flavour would be too sour but when I ate it, it definitely was not. It had the perfect amount of citrus, sourness, and lemon flavour. The pudding cake was also quite light and airy at the same time. The thing I liked most about this pudding cake was that you get three different textures in one bite. You first get the crunch from the crust, then you get the softness of the moist cake, and then finally you get the smooth lemon custard at the end.
I definitely recommend getting this product at Superstore. It’s pricey, but well worth it if you are intrigued by the ‘pudding cake’ and want to try something unique.

Honestly it doesn't look that appealing… but I'll take your word for it! Wouldn't it be too lemony though?
I know it totally doesn't! But Its actually pretty good, or, way better than my expectations anyways 😛 it's not too lemony or sour which was what I was afraid of when buying. But if you don't like lemon desserts don't buy it! I dont want to give you high expectations and have you not like it! LOL
$7 ain't that expensive, if you consider that it would be $1.75 a piece. If you go to any non-Chinese supermarket or non-Chinese bakery, anything will easily be over $2 so, from that perspective, it ain't that bad.
Out of all the products they have churned out, I have tried this, the cookies (meh) and the kulfi karma (save your caloric allowance for better ice cream). Haven't tried the chicken bombers (not that interested), cheesecake (too much for myself before it goes bad), the bannock (seems too much work) and pulled pork – really interested in trying this one but haven't been able to find it. So far, simplicity has won!
