Mango Pomelo Sago Pudding

This Mango Pomelo Sago Pudding is light, nutritious, and full of flavour. It's a very popular Asian dessert and was invented by a chef in Hong Kong. This is usually served chilled and is a must try for all mango and pomelo lovers!

Ingredients
  

  • 5 tbsp pomelo broken up into chunks
  • 1/2 cup mango puree
  • 1 cup coconut milk
  • 2 tbsp honey or sweetener
  • 1/2 cup cooked sago
  • 3 tbsp mango cubed or in small chunks

Instructions
 

  • Heat coconut milk in a saucepan along with your sweetener until combined.
  • Stir in your cooked sago and set aside.
  • In mason jars or individual cups, spoon coconut milk and sago mixture on the bottom.
  • Add half of the pomelo chunks into the cup.
  • Top mixture with mango puree
  • Garnish with mango chunks and the rest of the pomelo
  • Set in fridge for 30 minutes and mix before consuming.

Notes

*If you don't have sago, you can always substitute it for chia seeds to turn this into a Mango Pomelo Chia Pudding.
