When I’m feeling lazy after work but don’t want to go out for dinner or get take out, I look to make dishes that can be ready in just 10-15 minutes. So far, I haven’t found an easier fried rice recipe that is as tasty or hearty as this, so enjoy my recipe for your upcoming lazy day ahead!
This Kimchi Fried Rice recipe requires only four ingredients: white rice, kimchi + its juices, spam, and green onion. If you want to make it more hearty, you can add a fried egg on top of it too. 🙂
Kimchi Fried Rice Recipe
Serves 1 to 2
2 cups cooked white short grain rice
1/4 cup chopped green onion
1/2 cup kimchi (chopped)
1/4 cup kimchi juice (you can lessen it if you want it to be less spicy)
3/4 cup cubed spam
1 fried egg (optional)
In a hot wok or non-stick pan, stir fry the spam till it has a light crisp on the sides. Then stir in the kimchi until fragrant. Add rice and break up with spatula. Pour in kimchi juice. Mix everything together under high heat. Finally, garnish with green onion and the optional sunny side up egg.
